Brownie Bites, Leprechaun-Sized

I mean, come on, adorable right? Gold at the end of the rainbow and, a little bit of green thrown in, so you don't get pinched!

What you need:

  • 1 box of your FAVORITE brownie mix (or your favorite brownie recipe) and the stuff to make them.
  • 1 cup of green candy melts or white chocolate colored green with food coloring
  • green sugar sprinkles
  • Airheads Xtremes Bites
  • Rolos Caramel Candies
  • Mini Muffin cups
  • Mini Muffin pan

Fun, but easy Brownie Bites:

  • Preheat oven to 350 degrees. Prepare a greased mini muffin pan with mini cupcake liners.
  • Prepare brownie mix according to package directions (or recipe). Using a small scoop, pour approximately 1 tablespoon of batter into each mini muffin cup.
  • Bake for 10 to 12 minutes or until a toothpick inserted in the center comes out with moist crumbs attached. Cool brownie bites completely.
  • Melt candy melts according to package directions. If candy overheats or is too thick, add 1 teaspoon of coconut oil or vegetable shortening. Pour melted candy into a zip-tip freezer bag. Snip one corner and drizzle over brownie bites. Immediately sprinkle with colored sugar.
  • Press one wrapped Rolo candy into each brownie and place one Airhead Xtreme Bites candy next to the Rolo. Allow to set completely before packaging or serving.
