Tacos, coffee and sarcasm. I'll take, “What The Mad Mommy lives on” for $800, Alex! In all seriousness though, it's totally true. I could survive the rest of my days on taco/taco-esque food and coffee! The sarcasm, that just comes with the package! Easy recipes 101: if it has the word taco in it, you can make it simple. Now, don't get me wrong. I know REAL Mexican tacos take a lot of time and love to get the meat and tortillas perfect, but I'm just a mom throwing together a simple one-skillet taco pasta!
It is actually pretty amazing, how well the American-taco flavors blend and melt into the pasta. I have even used my leftover taco meat and re-fried beans, to make a taco pasta later!
With one-skillet meals, it is all about prep. Make sure you grab your ingredients, dice your veggies, brown your meat (if need be) and open any cans or packets you may have.
Combine your ingredients in your skillet, cover it and bring it to a boil over medium heat. You'll want to cook it for about 15 minutes and stir it occasionally, so the pasta doesn't stick.
This recipe can be adapted for vegetarians,
by swapping the beef for mushrooms and using vegetable stock.
Serve this up hot a dollop of sour cream and you've got an amazing meal in about 20 minutes! (Other fun topping: Jalapenos, black olives, green onions, cilantro, fried tortilla strips and taco sauce!
